The syrup mixture must be heated to the hard-crack stage (approximately 300°F/149°C), a temperature that imparts a glass-like, brittle texture to the lollipops. Two critical points must be noted: First, a candy thermometer is absolutely essential—it is your most reliable assistant. Second: Humid or rainy weather complicates the candy-making process, as sugar readily absorbs moisture, preventing the mixture from setting properly.
This small-batch fruit lollipop recipe makes about 10–12 standard pops, depending on mold size.
1 cup (200 g) granulated sugar.
1/2 cup (120 ml) light corn syrup or glucose syrup.
1/4 cup (60 ml) strained fruit juice.
1–1½ teaspoons concentrated flavoring (fruit flavor or vanilla), optional – this boosts the natural juice flavor.
A few drops gel or liquid food coloring, optional.
Pinch of citric acid or a few drops lemon juice, optional, for a tangy finish.

Lightly grease your lollipop molds with nonstick spray or oil, then wipe them with a paper towel so only a thin film remains. Insert the sticks so they’re ready to fill.
In your saucepan, add sugar, corn syrup, and fruit juice. Stir gently until everything is evenly moistened.
Place over medium heat. Stir constantly until the sugar is completely dissolved and the syrup looks clear. If sugar crystals form on the sides, you can carefully brush them down with a wet pastry brush.
Stop stirring once the syrup comes to a steady boil. Clip your thermometer to the pan and let the mixture cook undisturbed until it reaches about 300°F / 149°C. This is the hard-crack stage, ideal for lollipops and other hard candies.
Remove the pan from heat and let the bubbling calm down. Carefully stir in your flavoring and food coloring. Keep your face away from the steam – concentrated flavors can be quite strong.
Working quickly but carefully, pour or spoon the hot syrup into the prepared cavities, covering the stick ends. For neat outlines, avoid scraping thickening syrup from the sides of the pan.
Let the lollipops cool at room temperature until completely hard – usually 10–20 minutes. Gently twist or flex the mold to release. Store in airtight bags or containers to keep them crisp.Safety note: The syrup is hotter than boiling oil at this point. Keep children well away from the pot and never touch or taste until the candy has cooled.
